Our top summer gin drinks
Let’s face it, it’s been a weird summer and for a lot of us it certainly feels safer and drier (thanks La Niña) to stay in.
But that doesn’t mean you have to miss out on the good times. If the last few years have taught us anything, surely it’s how to make a good cocktail at home. We’ve pulled together a list of some of our favourite light and tasty summer drinks for you to enjoy over the weeks to come.
And for those of you still getting through the last of your Australian Christmas Gin, we’ve thrown in a crowd pleaser to help you polish it off.

SOUTHSIDE
INGREDIENTS
- 60mL Rare Dry Gin
- 30mL lime juice
- 15mL sugar syrup
- 8 mint leaves
METHOD
- Shake all ingredients together with ice
- Strain into a chilled coupette glass
- Garnish with a mint leaf

BLOODY GIN SOUR
INGREDIENTS
- 45mL Bloody Shiraz Gin
- 30mL lemon juice
- 15mL sugar syrup (1:1)
- Dash of egg white or aquafaba
METHOD
- Shake all ingredients together with ice
- Strain into a rocks glass over ice
- Garnish with a slice of lemon

SUMMER HEATWAVE
INGREDIENTS
- 25mL Modern Australian Gin
- 50mL orange juice
- 100mL sparkling wine
- Basil
METHOD
- Add gin and orange juice to a wine glass over lots of ice.
- Top up with your favourite sparkling wine.
- Garnish with a basil leaf.

WHO SHOT TOM COLLINS?
INGREDIENTS
- 30mL Modern Australian Gin
- 100mL old-fashioned lemonade
- 15mL Bloody Shiraz Gin
- Lemon
METHOD
- Mix gin and lemonade in a highball over ice
- Squeeze in two wedges of lemon
- Float Bloody Shiraz Gin on top

PANTRY STUFF
INGREDIENTS
- 50mL Australian Christmas Gin
- 20mL fresh lemon Juice
- 20mL sugar syrup [1:1]
- Dash of egg white
- ½ apricot, deseeded
METHOD
- Stir ingredients in a mixing glass over ice and strain into a chilled cocktail glass
- Muddle apricot*, then add all ingredients into a cocktail shaker with ice. Shake and fine strain into a chilled cocktail glass
- Garnish: Splash of bitters on top of the foam
*if you don’t have a muddler, you can use a rolling pin or alternatively blend the apricot into a puree beforehand in a food processor or use a stick blender
