Each time we make a batch of Rare Dry Gin we find ourselves with many kilograms of organically grown oranges that have essentially been steamed in gin, distilled with the nine other botanicals for seven hours. Four Pillars Marmalade was our first ‘Made From Gin’ product, and this orange peel marmalade has a deliciously fragrant and spicy flavour.

Preserved by Yarra Valley locals, A Bit of Jam & Pickle, this marmalade is now legendary. With the help of amazing producers, we’re working to become a closed-loop distillery where we waste nothing and turn every by-product of our gin-making process into something delicious.
