A DELICIOUS PLAYGROUND FOR SYDNEY’S GIN LOVERS AND A BUCKET LIST DESTINATION FOR GIN FANS EVERYWHERE

On the eve of World Gin Day 2020, we opened the Four Pillars Laboratory, made up of three distinct spaces: a Gin Shop to sell our gin and other ginny goodness, a Gin Lab featuring a 70-litre experimental still (named Eileen after co-founder Matt Jones’ mother) and Eileen’s Bar, a destination cocktail bar – all at the epicentre of Crown Street, Surry Hills.

GIN SHOP

The Gin Shop on the ground floor features all the signature and limited-edition gins you can usually only get online or at the distillery, alongside the bar gear, books, merch and Made From Gin treats, like Orange Marmalade and gin chocolate.

GIN LAB

Upstairs in the Gin Lab, our German-engineered CARL copper still, Eileen is ready and waiting to make small batches of bespoke gin for guests of our bookable gin, distiller and cocktail masterclasses. Eileen was in situ at our Four Pillars Distillery in Healesville before making her journey to Sydney in 2020.

The Gin Lab also features its own full bar, sitting proudly beneath four stunning fibreglass sphere pendants, a tribute to the signature four dots of Four Pillars. 

EILEEN’S BAR

Look out for the separate, discreet door on the corner of Fitzroy and Crown Street, where you’ll spot a doorstep with four dots and a simple copper brick welcoming you inside. If you can open the door, then Eileen’s Bar is open for business.

At its heart, Eileen’s Bar is a stunning asymmetrical, “Juniper Blue” concrete bar with 20 stools – the best seats in the house to watch all the gin-mixing action. There’s also tables for small groups, comfortable banquettes and a set of three cosy two-tops in the shadows at the back of the bar (our very own ‘Tinder Alley’). 

Our Creative Drinks Director, James Irvine (who helped design the space), is responsible for the gin drinks menu, which combines gin classics and modern masterpieces using the full Four Pillars family of gins. There’s also a range of snacks designed by Made From Gin maestro, Matt Wilkinson and a curated selection of beer, cider and wine from several of our best mates in the business.

Both the cocktail and snacks menu change from time to time, as more products come into the fold and the seasons change.
